Acushla Green Organic Extra Virgin Olive Oil, 500ml Glass Bottle
Balanced with a peppery finish. Cold extracted, PDO Tras-os-Montes, organic. Dark glass keeps it fresh.
Acushla is what happens when a family decides to do one thing and do it exceptionally well. Cold extracted from centenarian and native olive trees in the Tras-os-Montes region of Portugal, every bottle is organic, PDO certified, and produced at one of the only facilities in Portugal to hold FSSC22000 food safety certification. If you have only ever cooked with supermarket olive oil, this will change how you think about it.
Tasting notes
Balanced and lively. Green tomato leaf, artichoke and a hint of green banana, then a peppery finish that catches the back of your throat for a second. That tickle is the polyphenols. It means the oil is fresh.
How to use it
A finishing oil first, a cooking oil second. Pour it on after the heat is off: over soup, grilled fish, a bowl of pasta, a plate of sliced tomatoes. It also makes a serious vinaigrette. Use 1 to 2 teaspoons per plate to finish. The dark glass protects it from light; keep it away from the stove.
Pairs with
Burrata and tomatoes, grilled fish, white beans, minestrone, crusty bread and salt, a squeeze of lemon.
Try this: Pane e olio, the way it should be
Tear a loaf of good bread. Pour a puddle of Green into a shallow bowl. Add a pinch of flaky salt and, if you want, a few grinds of black pepper. Dip. That's the recipe. If the oil tastes bitter and peppery and a little grassy, you are doing it right.
The awards agree
Gold at Italian BIOL, London IOOC, Canada IOOC, Japan IOOC and Berlin GOOA. Grand Prestige Gold at Terra Olivo Israel. Silver at New York IOOC and Athena IOOC. Selected Best Olive Oil from Portugal by Olive Japan International.

How to use it
Finish
Heat off, oil on. A spoonful over soup, grilled fish, pasta, sliced tomatoes or burrata. This is where the Green and Limited Edition earn their keep.
Cook
Roast, sauté, pan-fry. Real extra virgin holds up to everyday heat better than people think. The Origin tin lives next to the stove for exactly this.
Dip
Bread, a puddle of oil, flaky salt. If it tastes grassy, a little bitter and peppery at the back of your throat, that’s fresh oil doing its job. Pane e olio is the whole test.
